Vinification:
Cold pressing with skins and frst fermentation at a temperature low temperatures for around 8 hours followed by a soft pressing. Cold decanting and fermentation
Aging:
4 months on the lees in stainless steel tanks, followed by bottle aging
Tasting notes:
Cataratto is high-yielding and rather neutral-tasting, with mild acidity, juicy texture and crisp lemon flavors.
Pairing:
White fish, tuna and caper salad, sautéed prawns with chili
