Vineyard:
The Pinot Nero “Revei” comes from a small 0.6-hectare plot in Aymavilles, planted at 650– 800 meters above sea level. Vines are Guyot-trained at a density of about 7,500 per hectare, with yields kept low at around 4,000 kg per hectare. The soils are of morainic origin, sandy with a limestone and granite base, giving freshness and minerality to the fruit.
Winemaking:
Grapes chilled and destemmed; cold maceration for 2 days; fermentation in stainless steel at 23 °C for about 12 days; aged in 700 L oak barrels (second refill), followed by 18 months of bottle refinement.
Color & Nose:
Bright ruby; aromas of ripe red fruit with hints of chocolate.
Palate:
Elegant and structured, with velvety tannins and a persistent, balanced finish. Body & Style: Refined, mountain-driven Pinot Nero with grace and freshness, and the potential to age for up to 20 years.
Food Pairing:
Excellent with braised veal cheek, Gressoney toma cheese, veal cutlet, and saffron risotto with ossobuco.
